Ingredients
- 2 cup water
- 1/2 cup dun-dried tomato (w/o oil)
- 1/2 cup (2 oz) crumbled feta
- 2 tsp fresh basil
- 1 tsp fresh oregano
- 1/2 tsp minced garlic
- 1/2 tsp Pepper
- 4 (6-oz) skinless boneless chicken breast halves
- Salt & Pepper
- 2 Tbs Butter
- 1/2 tsp grated lemon rind
- 1/4 cup chicken broth
- 2 tsp (opt) thin sliced basil
Steps
1) Boil water
2) Add tomatoes, remove from heat, cover & let stand 5 min
3) Drain & cut into thin strips
4) Add cheese, basil, oregano, garlic, pepper
5) Cut slit through one side of each chick breast
6) Stuff
7) Sprinkle w/ salt & pepper
8) Wrap each in aluminum foil, topping each with butter & lemon
9) Bake 425F for 20 min
10) Garnish w/ basil
