Ingredients
- 1 Tbs margarine
- 4 3-oz chicken breasts
- 1 thinly sliced onion
- 1 1/4 cup fresh/1Tbs dry basil
- 2 clove Garlic
- 1 15-oz can crushed tomato
- 3 Tbs plain nonfat yogurt
- 1 Tbs red wine vinegar
- 1 Tbs Parmesan cheese
- 2 cups cooked noodles
Steps
1) Put chicken in greased baking dish
2) Dot with butter and cover with onion, basil, garlic
3) (Begin water for noodles at the same time)
4) Microwave with loose cover on high 6-8 minutes, turning dish halfway through
5) Let stand, covered, 5 minutes
6) Remove chicken
7) Put tomatoes, yogurt, vinegar, and Parmesan cheese into onion mixture
8) Microwave 2-3 minutes until heated through (not boiling)
9) Add chicken
10) Serve with noodles
