Ingredients

  • 4 boneless chicken breast halves
  • 1/2 cup Bread Crumbs
  • 1 tsp oregano, divided
  • 1 tsp basil, divided
  • 1 egg, beaten to blend
  • 3 Tbs Butter
  • 3 Tbs Olive Oil
  • 3 cloves garlic, minced
  • 1 14-oz can diced tomatoes
  • 1 cup Parmesan cheese

Steps

1) Flatten chicken with mallot 2) Season with salt 3) Combine bread crumbs, 1/2 tsp oregano, 1/2 tsp basil 4) Dip chicken in egg, then bread crumbs 5) Melt butter over high heat 6) Add chicken and cook 2 min per side 7) Remove chicken 8) Add garlic, tomatoes, remaining spices to skillet 9) Simmer about 2 min 10) Spoon sauce over chicken, and sprinkle with Parmesan cheese 11) Bake at 300F until cheese just begins to melt
