Ingredients

  • 1/2 cup onion
  • 3/4 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt & Cayenne
  • 1 15-oz can pintos, rinse & drain
  • 1 cup diced cooked chicken
  • 1/2 cup sliced scallion, divided
  • 1/4 cup sliced olives, divided
  • 9 6" corn tortillas, divided
  • 1 cup grated Mexican cheese mix
  • 1/2 cup Milk
  • 1/4 cup chopped fresh cilantro
  • 8 oz Salsa
  • 1/4 cup low-fat sour cream

Steps

1) Sautee onion 2) Add cumin, chili powder, salt, pepper 3) Cook 1 minute 4) Add beans - cook 2 minutes 5) Add chicken, scallion, half of olives 6) Layer 3 tortillas in 9" greased pan 7) Cover with half of chicken, and half of cheese 8) Repeat, then finish with 3 tortillas 9) Combine milk, cilantro, salsa, and pour over tortillas 10) Cover and bake 35 min at 350F 11) Top with remaing cheese, scallion, and olives 12) Bake, uncovered, 5 minutes more
