Ingredients
- 6 4-oz boneless skinless chicken
- Salt & Pepper
- 1 medium green pepper, chopped
- 1/2lb sliced Mushrooms
- 4 cloves garlic, minced
- 1/4 cup diced celery
- 1/4 cup diced onion
- 1 15-oz can tomato puree
- 1 15-oz can diced tomatoes
- 1 Tbs balsamic vinegar
- 11/2 tsp basil
- 11/2 tsp oregano
- 1/4 tsp crushed red pepper
- 1/4 cup parsley
Steps
1) Sprinkle chicken with salt & pepper, and brown in skillet sprayed with Pam
2) Remove
3) Saute green pepper, mushrooms, garlic, celery, and onion until tender
4) Add tomato puree, diced tomato, vinegar, spices, and chicken
5) Boil
6) Cover, and simmer 30 minutes
7) Add parsley, simmer 15 minutes uncovered
8) Serve with pasta (optional)
