Ingredients

  • 3 cups brown rice
  • 2 cups artichoke hearts
  • 4 cups cooked chicken breast (3lb)
  • 6 cup scallion, chopped
  • 2 10-oz cans cream of chicken soup
  • 1 cup fat-free mayonnaise
  • 2 Tbs lemon juoce
  • 1 Tbs curry
  • Salt & Pepper
  • 4 cup croutons
  • 2 cups grated cheese
  • 2 Tbs parsley

Steps

1) Cook rice in 3 cups water for 20 minutes 2) Mix artichoke, chicken, & scallion 3) Mix soup, mayonnaise, lemon juice, curry, salt & pepper 4) Mix croutons, cheese, and parsley 5) Put 1/3 rice in 9x15 baking dish 6) Cover with chicken mix, then sauce mix, top with croutons 7) Bake 1 hour at 350F 8) Divide remaining ingredients in half and freeze
