Ingredients

  • 11-12 oz hazelnuts
  • 10 Egg whites
  • 1/2 cup sugar
  • 1 tsp Vanilla
  • 1 tsp vinegar
  • Fresh berries or dried apricots
  • Whipped Cream

Steps

1) Nuts should be toasted, then finely chopped before starting (but reserve 12-13 whole nuts for the top) Preheat oven to 350FF 2) Butter, then flour pans 3) Beat egg whites until very stiff, but not dry 4) Slowly beat in sugar 5) Add vanilla 6) Fold in nuts and vinegar 7) Divide into 2 10" springform pans, mounded slightly in the middle, being careful to avoid air bubbles 8) Bake 1 hr 9) Remove sides, & bake until sides are crisp 10) Cool completely 11) Top 1 meringue with berries & whipped cream 12) Top with second meringue 13) Dust with confectioners' sugar (optional) 14) Decorate with 12-13 whipped cream 'rosettes' with a nut in each
