Ingredients
- 11/4 cup white rice
- 1 can black beans, drained
- 1 cup canned or frozen corn
- Salt & Pepper
- 1/2 tsp chili powder
- 1 tsp Cumin
- 1 Tbs dried chives
- 1 tsp dried oregano
- 1 Tbs minced garlic
- 1 1/2 lb boneless skinless chicken breast halves, raw, diced
- 1 diced bell pepper
- 1 cup chicken stock
- 1 cup water
- 1 cup Salsa
- 2 Tbs tomato paste
- 1 cup grated cheese
Steps
1) Spray 9x13 pan with Pam
2) Layer rice, beans, and corn in pan
3) Mix spices (salt through garlic)
4) Sprinkle over rice
5) Layer chicken, then bell pepper over all
6) Mix stock, water, salsa and tomato paste, and pour over
7) Bake, covered, 375F for 11/4 hours
8) Uncover, sprinkle with cheese, and bake an additional 4-5 minutes
