Ingredients

  • 1 tsp chili powder
  • 1/2 tsp salt, divided
  • 1 1/4 lb lean pork chops, trimmed
  • 2 cups diced tomatoes
  • 1 cup chopped bell peppers
  • 3/4 cup thinly sliced celery
  • 1/2 cup chopped onion
  • 1 Tbs hot pepper sauce
  • 2 Tbs finely chopped parsley

Steps

1) Rub chili and 1/4 tsp salt over one side of pork chops 2) Combine tomatoes, bell pepper, celery, onion, pepper sauce and thyme 3) Spray skillet with Pam 4) Heat until hot 5) Add pork chops, seasoned side down 6) Cook 1 min 7) Turn, and top with tomato mixture 8) Boil, then simmer, covered, 25 minutes until pork is tender and mixture thickened 9) Remove pork chops 10) Increase heat and boil tomato mixture 2 minutes to thicken 11) Add parsley and 1/4 tsp salt & spoon over pork
