Ingredients
- 6 oz fruit bits (diced mixed dried fruits)
- 2 oz pecan, chopped
- 3 cloves Garlic
- 2 Tbs dry red wine
- 11/4 lb pork tenderloin
- 1/4 tsp Salt
- 1/4 tsp Pepper
Steps
1) Combine fruit, nuts, garlic, and wine
2) Marinate 5 minutes
3) With sharp knife, cut tenderloin lengthwise slit to 1/2" of bottom of tenderloin to form pocket
4) Likewise slit each side
5) Stuff with fruit, tying with kitchen string
6) Place on rack and sprinkle with salt and pepper
7) Roast 25-30 minutes at 350F until meat reaches 160F
8) Let stand 5 minutes before cutting into 1/2" slices
9) Suggest serving with sweet potato and pan-roasted onions
