Ingredients

  • 1 cup thinly sliced onion
  • 1/3 cup Lemon juice
  • 2 Tbs fresh parsley
  • 1 Tbs fresh rosemary
  • 1 Tbs fresh thyme
  • 2 Tbs grated lemon rind
  • 3 Tbs water
  • Salt & Pepper
  • 2 cloves minced garlic
  • Cooking spray
  • 5-lb boneless leg of lamb, trimmed

Steps

1) Blend first 9 ingredients in blender 2) Marinade lamb 4-24 hours in refrigerator 3) Place lamb on drip pan 4) Bake at 450F for 15 minutes 5) Decrease temperature to 350F and continue baking for 80 minutes, or until it reaches 145F (medium rare) 6) Place lamb on plastic cutting board 7) Cover loosely with foil, and let stand for 15 minutes
