Ingredients
- 1 tsp Salt
- 1/2 tsp cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp Pepper
- 1 1/2 lb cubed peeled sweet potatoes
- 4 tsp olive or canola oil, DIVIDED
- 2 3/4-pound pork tenderloin
- 4 large apples, peeled and cored
Steps
1) Combine salt, cinnamon, cardamom, and pepper
2) Put sweet potatoes in 9x13 pan sprayed with Pam
3) Sprinkle with 1 tsp spice mixture and 3 tsp oil
4) Roast sweet potatoes 10 minutes at 425F
5) Rub remaining oil and spices over pork
6) Place pork over sweet potatoes
7) Bake 20 minutes longer
8) Cut each apple into 8 wedges
9) Turn pork, and arrange apples around pork
10) Bake 20 minutes more, until pork is 160F
