Ingredients
- 4 cloves garlic, minced
- Salt & Pepper
- 5 sun-dried tomatoes, diced
- 10 oz chopped spinach, thawed
- 1/4 cup crumbled feta
- 3 Tbs Cream cheese
- 1/2 tsp grated lemon rind
- 4 4-oz boneless pork chops (thick)
- 2 Tbs Lemon juice
- 2 tsp Dijon mustard
- 1/4 tsp dried oregano
Steps
1) Saute 2 cloves garlic, dash of salt & pepper, tomatoes, and (drained) spinach until moisture evaporates
2) Remove from heat & stir in cheeses and lemon rind
3) Cut horizontal slit through thickest part of each pork chop, and stuff with sauteed mixture
4) Put on broiling pan
5) Mix dash salt & pepper, 2 cloves garlic, lemon juice, mustard and oregano
6) Brush half of sauce on pork
7) Broil 6 min; turn pork & brush with remaining sauce & broil 2 min more
