Ingredients

  • 8-10 oz tenderloin (12-15)
  • 1 Tbs grated orange peel
  • 1/2 tsp thyme
  • 1 clove Garlic
  • Pepper
  • 1 Tbs wine vinegar
  • 1 Tbs honey (1)
  • 1 Tbs orange juice concentrate (1)

Steps

1) With fork, work orange peel, thyme, pepper and garlic into paste 2) Rub onto pork 3) Combine orange juice and vinegar, and pour over pork 4) Marinate 2 hours or overnight 5) Grease baking pan, and heat for 4 minutes at 425FF 6) Set pork in pan 7) Drizzle with half of the honey 8) Roast 10 minutes 9) Turn, spoon juices over meat and drizzle with the rest of the honey 10) Roast 20-25 minutes more
