Ingredients
- 2 cups white flour
- 1/2 cup brown sugar
- 1 cup currants or chopped raisins
- 1 cup Yogurt
- 1/4 cup applesauce
- 2 Tbs oil
- small can crushed pineapple, drained
- 2 cup grated carrots
- 2 tsp cinnamon
- 11/2 tsp baking soda
- 11/2 tsp baking powder
- 3/4 tsp ground cloves
- 1/2 tsp nutmeg
- 1 egg
- 2 Egg whites
- 3/4 cup Milk
- 1 pkg sugar free white chocolate or vanilla pudding mix
- 8 oz carton Cool Whip
Steps
1) Mix ingredients
2) Pour into greased 9x13" pan
3) Bake at 350F for 45-50 minutes, until knife comes out clean
4) Add pudding mix to milk and beat until blended
5) Fold in cool whip
6) Cover cake
