Ingredients

  • 2 cups white flour
  • 1/2 cup brown sugar
  • 1 cup currants or chopped raisins
  • 1 cup Yogurt
  • 1/4 cup applesauce
  • 2 Tbs oil
  • small can crushed pineapple, drained
  • 2 cup grated carrots
  • 2 tsp cinnamon
  • 11/2 tsp baking soda
  • 11/2 tsp baking powder
  • 3/4 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1 egg
  • 2 Egg whites
  • 3/4 cup Milk
  • 1 pkg sugar free white chocolate or vanilla pudding mix
  • 8 oz carton Cool Whip

Steps

1) Mix ingredients 2) Pour into greased 9x13" pan 3) Bake at 350F for 45-50 minutes, until knife comes out clean 4) Add pudding mix to milk and beat until blended 5) Fold in cool whip 6) Cover cake
