Ingredients

  • 21/4 cup Milk
  • 2 tsp sugar
  • 1 tsp dried thyme
  • Cayenne
  • 3/4 cup cornmeal
  • 2 egg yolks
  • 4 Egg whites
  • 1 cup chopped onion
  • 8 oz diced ham
  • 1 cup (4 oz)(4 grated cheddar
  • 1/4 cup Parmesan cheese

Steps

1) Scald milk, sugar, thyme, and pepper 2) Gradually add cornmeal 3) Cook 3 minutes, stirring constantly with whisk, until thickened and smooth 4) Quickly stir in yolks, one at at time 5) Sautee onion, and add to cornmeal mixture 6) Sautee ham 5 minutes until it begins to brown, and add to cornmeal 7) Beat egg whites 8) Fold into cornmeal mix 9) Bake at 375F for 50 minutes
