Ingredients

  • 1 1/2 tsp tumeric
  • 1 1/2 tsp Cumin
  • 1 1/2 tsp coriander
  • 1 1/2 tsp chili powder
  • 3/4 tsp cinnamon
  • 1/2 tsp Salt
  • 2 cups chopped onion
  • 11/2 Tbs fresh ginger
  • 2 bay leaves
  • 1 garlic clove, minced
  • 1 lb beef stew meat
  • 14 oz beef broth
  • 1/2 cup water
  • 1 cup chopped green bell pepper
  • 1/4 cup chopped dried apricots
  • 1/4 cup all-fruit apricot spread
  • 2 tsp red wine vinegar
  • 1/4 cup low-fat buttermilk

Steps

1) Combine tumeric, cumin, coriander, chili, cinnamon and salt in small bowl 2) Spray Pam in dutch oven - add spices and cook 15 seconds, stirring constantly 3) Add onion - saute 2 min 4) Add ginger, bay leaves, garlic - saute 15 seconds 5) Add beef & brown 6) Add broth, water, green pepper, apricots, apricot spread, and vinegar, and bring to boil 7) Simmer 11/2 hours 8) Uncover and remove bay leaves 9) Simmer 30 min or until fairly dry 10) Remove from heat and stir in buttermilk
