Ingredients
- 1 1/2 tsp tumeric
- 1 1/2 tsp Cumin
- 1 1/2 tsp coriander
- 1 1/2 tsp chili powder
- 3/4 tsp cinnamon
- 1/2 tsp Salt
- 2 cups chopped onion
- 11/2 Tbs fresh ginger
- 2 bay leaves
- 1 garlic clove, minced
- 1 lb beef stew meat
- 14 oz beef broth
- 1/2 cup water
- 1 cup chopped green bell pepper
- 1/4 cup chopped dried apricots
- 1/4 cup all-fruit apricot spread
- 2 tsp red wine vinegar
- 1/4 cup low-fat buttermilk
Steps
1) Combine tumeric, cumin, coriander, chili, cinnamon and salt in small bowl
2) Spray Pam in dutch oven - add spices and cook 15 seconds, stirring constantly
3) Add onion - saute 2 min
4) Add ginger, bay leaves, garlic - saute 15 seconds
5) Add beef & brown
6) Add broth, water, green pepper, apricots, apricot spread, and vinegar, and bring to boil
7) Simmer 11/2 hours
8) Uncover and remove bay leaves
9) Simmer 30 min or until fairly dry
10) Remove from heat and stir in buttermilk
