Ingredients
- 3-4 lb boneless pork roast (shoulder or butt)
- 1 tsp black pepper
- 1 tsp Salt
- 1 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp Paprika
- 1 med green bell pepper, sliced (optional)
- 1 med onion, sliced
- 1 18-oz jar barbecue sauce
Steps
1) Combine all spices in a bowl and rub onto roast
2) If possible, let it marinade in rub overnight
3) Mix ingredients for barbeque sauce in saucepan (if not using bottled) and heat 2-3 minutes until sugar dissolves
4) Place green pepper and onion in bottom of slow cooker
5) Add roast, and pour sauce over it
6) Cover and cook on LOW 10+ hours, (oven at 225) or until you can easily shred the meat with two forks (I try to start it cooking about 20-24 hours before I want to serve it)
7) Serve on buns or rice

Too much cayenne. Not hot. Try swapping for paprika and onion

Used 500g chunked pork. Cut all spices in half (1/2 tsp each) and substituted sweet paprika for cayenne. Sliced onion and layered on top. Foil sealed and baked at 125 C for 5 hours.
