Ingredients

  • *5 scallions sliced
  • *2 Tbs fresh minced ginger
  • *3 cloves Garlic
  • *1/2 tsp allspice
  • *1/2 tsp Pepper
  • *1/4 tsp cinnamon
  • *8 tsp Cayenne
  • *3/4 tsp Salt
  • *1 tsp brown sugar
  • 24 large (1 lb) shrimp
  • 2 tsp brown sugar
  • 1 tsp fresh minced ginger
  • 20-oz can pineapple wedges
  • 1 large red bell pepper, diced
  • 2 Tbs fresh lime juice
  • 2 Tbs chopped fresh mint

Steps

1) Mix * ingredients 2) Add shrimp, tossing well to coat 3) Thread onto skewers 4) Mix pineapple, bell pepper, lime juice, brown sugar, ginger, mint 5) Thread onto skewers 6) Grill about 2 minutes on each side
