Ingredients
- *5 scallions sliced
- *2 Tbs fresh minced ginger
- *3 cloves Garlic
- *1/2 tsp allspice
- *1/2 tsp Pepper
- *1/4 tsp cinnamon
- *8 tsp Cayenne
- *3/4 tsp Salt
- *1 tsp brown sugar
- 24 large (1 lb) shrimp
- 2 tsp brown sugar
- 1 tsp fresh minced ginger
- 20-oz can pineapple wedges
- 1 large red bell pepper, diced
- 2 Tbs fresh lime juice
- 2 Tbs chopped fresh mint
Steps
1) Mix * ingredients
2) Add shrimp, tossing well to coat
3) Thread onto skewers
4) Mix pineapple, bell pepper, lime juice, brown sugar, ginger, mint
5) Thread onto skewers
6) Grill about 2 minutes on each side
