Ingredients

  • 1 cup Yogurt
  • 1/4 cup fresh mint, chopped
  • 1/4 tsp Salt
  • 3 Tbs Lemon juice
  • 1 Tbs Olive Oil
  • 1/2 tsp oregano
  • Salt & Pepper
  • 1 lb. boneless, skinned chick breast,
  • 1 large red onion
  • 16 cherry tomatoes
  • 1 lg cucumber
  • 4 6" pita bread halves

Steps

1) Mix yogurt mint, salt 2) Set aside 3) Peel cucumber 4) Cut in half lengthwise and remove seeds 5) Cut this, chicken, and onion into 16 pieces each 6) Mix lemon juice, oil, & spices 7) Add chicken, cucumber & onion 8) Marinade 9) Thread on 8 skewers, grill ~8 min 10) per side 11) Cut pitas in half 12) Using 1 skewer per half, fill pita 13) Drizzle with yogurt mixture
