Ingredients

  • 1/4 cup soy sauce
  • 2 Tbs frozen OJ concentrate
  • 1 Tbs fresh chopped ginger
  • 8 tsp cloves
  • 3/4 lb well trimmed pork tenderloin
  • 2 Tbs white wine vinegar
  • 8 oz linguine, broken in thirds
  • 2 cup baby carrots, or carrot sticks
  • 1 cup snow peas
  • 2 red bell peppers, cut in half
  • 1 navel orange, peeled & sectioned

Steps

1) Mix soy sauce, OJ, ginger, cloves 2) Transfer 3 cup of the mixture to a plastic bag, and marinade pork 3) Add vinegar to the remaining dressing 4) Cook linguine 5 minutes 5) Add carrots, and cook 6 minutes 6) Add snow peas and cook until done, ~30 sec 7) Toss dressing into pasta 8) Grill pork and bell peppers ~15 min (remove peppers earlier if done) 9) Slice pork and peppers 10) Mix peppers and oranges with the pasta
