Ingredients
- 1 lb. bay scallops
- 1 onion, sliced into half rings
- 1 lg green pepper, cut in strips
- 1 stalk celery, cut on diagonal
- 1 clove Garlic
- 1/2 cup chicken broth
- black pepper
- 1/2 tsp ginger
- 2 Tbs cornstarch
- 3 Tbs soy sauce
- 2 lg tomatoes, seeded & chopped
- 4 servings rice, cooked
Steps
1) Mix chicken broth, cornstarch, soy sauce, and set aside
2) Saute scallops 2 minutes
3) (If using sea scallops, cut in quarters

5) Add onion, pepper, celery, and garlic
6) Stir-fry 2 minutes
7) Add cornstarch mixture and tomatoes
8) Cook additional 2-3 minutes
9) Serve over rice
