Ingredients

  • 1 lb. bay scallops
  • 1 onion, sliced into half rings
  • 1 lg green pepper, cut in strips
  • 1 stalk celery, cut on diagonal
  • 1 clove Garlic
  • 1/2 cup chicken broth
  • black pepper
  • 1/2 tsp ginger
  • 2 Tbs cornstarch
  • 3 Tbs soy sauce
  • 2 lg tomatoes, seeded & chopped
  • 4 servings rice, cooked

Steps

1) Mix chicken broth, cornstarch, soy sauce, and set aside 2) Saute scallops 2 minutes 3) (If using sea scallops, cut in quarters 4) ) 5) Add onion, pepper, celery, and garlic 6) Stir-fry 2 minutes 7) Add cornstarch mixture and tomatoes 8) Cook additional 2-3 minutes 9) Serve over rice
