Ingredients

  • 1 cup chopped red bell pepper
  • 1 cup chopped scallion
  • 2 tsp Olive Oil
  • 8 oz cooked black beans
  • 8 dried tomato halves, chopped
  • 2 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp Paprika
  • 1/2 tsp garlic powder
  • red pepper flakes
  • 1/4 cup chicken broth
  • 1 Tbs corn starch
  • 24 med (32 oz) shrimp, shelled & deveined
  • 2 cups cooked rice

Steps

1) Mix bell pepper, scallion, and oil in 2 qt casserole 2) Cover and microwave high 4-5 minutes 3) Add beans, tomato, oregano, chili, paprika, garlic, red pepper, Mix broth and cornstarch, and add 4) Microwave 4-5 minutes until thickened 5) Add shrimp & cook 3-5 minutes on high, stirring once, until shrimp is opaque
