Ingredients

  • 2 Tbs Lime juice
  • 2 tsp cornstarch
  • 1/2 tsp ground cumin
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 lb uncooked peeled shrimp
  • 1 red Bell pepper, chopped
  • 1 sm onion, chopped
  • 1/3 cup chicken broth
  • 2 cloves Garlic
  • 1/8 tsp Cayenne
  • 2 Tbs chopped fresh cilantro
  • Rice

Steps

1) Mix lime juice, cornstarch, cumin, salt and pepper 2) Add shrimp 3) Marinade 1hr 4) Saute peppers, onions, broth, garlic, cayenne and cilantro 2 minutes 5) Add shrimp and cook 3-4 minutes more, or until shrimp are pink and firm
