Ingredients
- 2 Tbs Lime juice
- 2 tsp cornstarch
- 1/2 tsp ground cumin
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1 lb uncooked peeled shrimp
- 1 red Bell pepper, chopped
- 1 sm onion, chopped
- 1/3 cup chicken broth
- 2 cloves Garlic
- 1/8 tsp Cayenne
- 2 Tbs chopped fresh cilantro
- Rice
Steps
1) Mix lime juice, cornstarch, cumin, salt and pepper
2) Add shrimp
3) Marinade 1hr
4) Saute peppers, onions, broth, garlic, cayenne and cilantro 2 minutes
5) Add shrimp and cook 3-4 minutes more, or until shrimp are pink and firm
