Ingredients

  • 2 tsp sesame oil
  • 4 scallions, cut in 1" slices
  • 1 tsp peanut oil
  • 11/2 lb sea scallops
  • Salt
  • 1/4 cup orange juice
  • 1/4 cup sweet rice wine
  • 2 Tbs Lemon juice
  • 2 Tbs soy sauce
  • 1/4 tsp fresh grated ginger
  • 1/4 tsp red pepper flakes
  • 1 tsp water
  • 1/2 tsp corn starch

Steps

1) Saute scallions in half of sesame oil for 1 min 2) Remove 3) Heat remaining sesame oil & peanut oil 4) Dry and salt scallops 5) Cook on high 2 min per (golden brons) 6) Turn, reduce heat & cook 1 min 7) Remove 8) Heat OJ, wine, soy sauce, ginger, red pepper, salt 9) Simmer 3 min 10) Mix water & cornstarch - add to thicken 11) Add scallops to pan - toss to coat 12) Top with scallions
