Ingredients
- 1 Tbs Butter
- 1/2 cup diced, cooked carrot
- 2 Tbs diced onion
- 1 Tbs Flour
- 1/2 tsp Salt
- Paprika
- 3 Tbs sherry
- 1/2 cup skimmed evaporated milk
- 1 egg yolk
- 1 lb. bay (small ) scallops
- 2 Tbs Bread Crumbs
- parsley
Steps
1) Melt butter in microwave in 1 1/2 qt casserole (high 15-30 seconds)
2) Add flour, salt, paprika
3) Stir in sherry, mixing until smooth
4) Add scallops
5) Cover, cook on medium 6 minutes, stirring every 2 minutes
6) Mix egg yolk and milk
7) Pour over scallops, along with carrots
8) Sprinkle with bread crumbs and parsley
9) Continue cooking on medium 4 minutes, until heated through
