Ingredients

  • 1 Tbs Butter
  • 1/2 cup diced, cooked carrot
  • 2 Tbs diced onion
  • 1 Tbs Flour
  • 1/2 tsp Salt
  • Paprika
  • 3 Tbs sherry
  • 1/2 cup skimmed evaporated milk
  • 1 egg yolk
  • 1 lb. bay (small ) scallops
  • 2 Tbs Bread Crumbs
  • parsley

Steps

1) Melt butter in microwave in 1 1/2 qt casserole (high 15-30 seconds) 2) Add flour, salt, paprika 3) Stir in sherry, mixing until smooth 4) Add scallops 5) Cover, cook on medium 6 minutes, stirring every 2 minutes 6) Mix egg yolk and milk 7) Pour over scallops, along with carrots 8) Sprinkle with bread crumbs and parsley 9) Continue cooking on medium 4 minutes, until heated through
