Ingredients

  • Sauce:
  • 1/4 cup Scallions
  • 2 Tbs fresh parsley
  • 1 Tbs Lemon juice
  • 11/2 Tbs light sour cream
  • 1/2 Tbs ketchup
  • 1/2 Tbs Dijon mustard
  • red pepper
  • Cakes:
  • 1/2 cup cornmeal
  • 1 Tbs Flour
  • 1/2 Tbs sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • Salt
  • Cayenne
  • 1/2 cup buttermilk
  • chives
  • 1 egg, beaten
  • 1/2 cup frozen corn
  • 6 oz bay scallops

Steps

1) Blend sauce ingredients in blender until smooth 2) Cover & chill 3) Combine cornmeal through cayenne in bowl 4) Add buttermilk, chives, egg, and blend 5) Fold in corn and scallops 6) Spoon heaping tablespoons into skillet or griddle heated med-high 7) Turn when edges begin to brown (about 2 min) Cook additional to minues, until lightly brown 8) Serve warm, with sauce
