Ingredients

  • 1 lb. Catfish, trout, etc, 3/4" thick
  • 1/4 cup buttermilk or skim milk
  • 1 egg white, slightly beaten
  • 3 cup yellow cornmeal
  • 3 cup dry breadcrumbs
  • 1+ Tbs Cajun seasoning
  • (optional) Lemon wedges
  • 1/2 Tbs salt

Steps

1) Remove skin from fish 2) Cut into 2x11/2" pieces 3) Mix buttermilk and egg white with fork 4) Mix cornmeal, breadcrumbs, Cajun seasoning 5) Dip fish into buttermilk, then coat with cornmeal 6) Bake in greased 9x13" pan at 500F for about 10 minutes, or until fish flakes easily with fork 7) Serve with lemon wedges
