Ingredients
- 1 lb skirt or flank steak
- 1T oil
- 1 green Pepper
- 1/2 tsp Salt
- Pepper
- 1 14-oz can diced tomatoes
- 2 Tbs hot salsa
- 3T bottled Lime juice
- 1 clove Garlic
- 8 7" flour tortillas, warmed
Steps
1) Cut steak in half crosswise
2) Heat oil in skillet over high heat
3) Add steak and cook 4-5 minutes each side for medium doneness
4) Meanwhile, coarsely chop green pepper and peel garlic
5) Remove steak and rest on carving board
6) Season with salt and pepper
7) Add green pepper, tomato, lime juice, and garlic to skilled
8) Cook over high, stirring once or twice, for 5 minutes, or until peppers are tender and sauce thickens
9) Slice steak into narrow strips
10) To serve, put steak and tomato in tortilla
11) Fold bottom edge over filling, then fold two sides in
