Ingredients

  • 2 lb beef chuck roast, fat removed or trimmed
  • 2 cups baby carrots, raw
  • 1 yellow onion, quartered
  • 1 cup celery in 3-inch pieces
  • 4 red potatoes, halved
  • 2 2-inch cabbage wedges
  • 1/4 cup dried onion flakes
  • 2 tablespoons apple cider vinegar
  • 1 bay leaf
  • 2 Tbs Olive Oil
  • 2 Tbs horseradish
  • 3 cups beef broth
  • 1/2 teaspoon kosher salt
  • 1/2 tsp black pepper

Steps

1) Spray one roasting pan with nonstick cooking spray 2) place chuck roast in roasting pan or crock pot 3) Add remaining ingredients 4) Bake at 325F, covered, for 2-3 hours (or 6-8 hours in crockpot on low)
