Ingredients

  • 1 jalepeno pepper, diced
  • 1 tsp dried mixed herbs
  • 1 15oz can diced tomatoes
  • 1 Tbs tomato paste
  • 1 Tbs cornmeal, blended w/ 1/2c water
  • 1 lg onions, sliced
  • 1 clove Garlic
  • 1 c sliced mushroom
  • 3 med zucchini, thickly sliced
  • 2 Tbs breadcrumbs
  • 1-2 Tbs Parmesan cheese

Steps

1) Saute onion, garlic, pepper and herbs for 2 -3 minutes, then add mushrooms and cook for 5 minutes 2) Add tomatoes and paste, boil, then stir in corn meal mixture and cook until sauce thickens 3) Meanwhile, steam zucchini until tender (10-15 min) 4) Place zucchini in a shallow ovenproof dish and pour tomato sauce over top 5) Top with breadcrumbs and cheese 6) Place under hot broiler until golden brown
