Ingredients
- 1 jalepeno pepper, diced
- 1 tsp dried mixed herbs
- 1 15oz can diced tomatoes
- 1 Tbs tomato paste
- 1 Tbs cornmeal, blended w/ 1/2c water
- 1 lg onions, sliced
- 1 clove Garlic
- 1 c sliced mushroom
- 3 med zucchini, thickly sliced
- 2 Tbs breadcrumbs
- 1-2 Tbs Parmesan cheese
Steps
1) Saute onion, garlic, pepper and herbs for 2 -3 minutes, then add mushrooms and cook for 5 minutes
2) Add tomatoes and paste, boil, then stir in corn meal mixture and cook until sauce thickens
3) Meanwhile, steam zucchini until tender (10-15 min)
4) Place zucchini in a shallow ovenproof dish and pour tomato sauce over top
5) Top with breadcrumbs and cheese
6) Place under hot broiler until golden brown
