Ingredients

  • 1 lb baby carrots
  • 1 Tbs Olive Oil
  • Salt
  • Pepper
  • 12 fingerling potatoes, halved lengthwise
  • 6 oz baby radishes, halved
  • 3 Tbs balsamic vinegar
  • 1 Tbs chopped shallots
  • 2 cups 2" slices asparagus
  • 1 Tbs fresh parsley or cilantro

Steps

1) Combine carrots, oil, salt & pepper, potatoes, radishes in roasting pan 2) Bake at 500F for 20 minutes 3) Add vinegar, shallots, and asparagus, and continue cooking for 5 minutes 4) Top with parsley
