Ingredients
- 1 lb baby carrots
- 1 Tbs Olive Oil
- Salt
- Pepper
- 12 fingerling potatoes, halved lengthwise
- 6 oz baby radishes, halved
- 3 Tbs balsamic vinegar
- 1 Tbs chopped shallots
- 2 cups 2" slices asparagus
- 1 Tbs fresh parsley or cilantro
Steps
1) Combine carrots, oil, salt & pepper, potatoes, radishes in roasting pan
2) Bake at 500F for 20 minutes
3) Add vinegar, shallots, and asparagus, and continue cooking for 5 minutes
4) Top with parsley
