Ingredients

  • 1 cup onion, chopped
  • 1/2 cup celery, sliced
  • 2 tsp Olive Oil
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • Pepper
  • 2 med. zukes, sliced
  • 1 med. green pepper - chopped
  • 1 sm. eggplant, cubed
  • 1 can diced tomatoes
  • Garlic
  • Pam
  • 1/4 c Parmesan cheese

Steps

1) Combine all but cheese in 2 qt. baking dish 2) Cover and cook at 350o for 1 hour 3) Top with cheese, and cook uncovered 3 minutes more
