Ingredients
- 1 cup onion, chopped
- 1/2 cup celery, sliced
- 2 tsp Olive Oil
- 1/2 tsp oregano
- 1/2 tsp basil
- Pepper
- 2 med. zukes, sliced
- 1 med. green pepper - chopped
- 1 sm. eggplant, cubed
- 1 can diced tomatoes
- Garlic
- Pam
- 1/4 c Parmesan cheese
Steps
1) Combine all but cheese in 2 qt. baking dish
2) Cover and cook at 350o for 1 hour
3) Top with cheese, and cook uncovered 3 minutes more
