Ingredients
- 2 10-oz pkg spinach, frozen
- 1 lg onion, chopped
- 1 Tbs Olive Oil
- 1/4 cup white flour
- Salt
- Pepper
- 11/2 cup skim milk
- 1/2 cup grated mozzarella
Steps
1) Thaw spinach in microwave
2) Saute onion in olive oil
3) Add flour, salt & pepper
4) Gradually stir in milk
5) Boil, then cook 1-2 minutes or until thickened
6) Add spinach, then cheese
