Ingredients

  • 2 10-oz pkg spinach, frozen
  • 1 lg onion, chopped
  • 1 Tbs Olive Oil
  • 1/4 cup white flour
  • Salt
  • Pepper
  • 11/2 cup skim milk
  • 1/2 cup grated mozzarella

Steps

1) Thaw spinach in microwave 2) Saute onion in olive oil 3) Add flour, salt & pepper 4) Gradually stir in milk 5) Boil, then cook 1-2 minutes or until thickened 6) Add spinach, then cheese
