Ingredients

  • 2 lb sliced carrots
  • 1/3 cup vegetable broth
  • 1 Tbs diced fresh ginger
  • 3/4 tsp crushed coriander seeds
  • 1 tsp brown sugar
  • 2 tsp melted butter
  • Pepper
  • Salt
  • Fresh parsley/cilantro

Steps

1) Mix all but parsley in shallow 2-quart baking dish (may be assembled day before) 2) Cover and bake at 375F for 1 hour, stirring occasionally 3) Sprinkle with parsley
