Ingredients
- 2 lb sliced carrots
- 1/3 cup vegetable broth
- 1 Tbs diced fresh ginger
- 3/4 tsp crushed coriander seeds
- 1 tsp brown sugar
- 2 tsp melted butter
- Pepper
- Salt
- Fresh parsley/cilantro
Steps
1) Mix all but parsley in shallow 2-quart baking dish (may be assembled day before)
2) Cover and bake at 375F for 1 hour, stirring occasionally
3) Sprinkle with parsley
