Ingredients
- 1 lb cut green beans
- 3/4 cup corn
- 3/4 cup diced red bell pepper
- 1/2 cup minced red onion
- 1/4 cup chopped fresh cilantro
- 1 16-oz can white beans, rinsed
- 1 15-oz can black beans, rinsed
- 1/4 cup Lime juice
- 1/4 cup red wine vinegar
- 1 Tbs minced garlic
- 1 Tbs Olive Oil
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp Salt
- 1/4 tsp red chile sauce (i.e.Cholula)
- Dash of red pepper
- 1 cup diced seeded tomato
- 1 cup diced avocado
Steps
1) Saute green beans & corn 3 minutes, until lightly browned
2) Mix in bowl: green beans & corn, red pepper, red onion, cilantro, white & black beans
3) Mix juice, vinegar, and spices (through red pepper), and add to beans
4) Cover and chill at least 30 minutes
5) Add tomato & avocado just before serving
