Ingredients

  • 1 lb cut green beans
  • 3/4 cup corn
  • 3/4 cup diced red bell pepper
  • 1/2 cup minced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 16-oz can white beans, rinsed
  • 1 15-oz can black beans, rinsed
  • 1/4 cup Lime juice
  • 1/4 cup red wine vinegar
  • 1 Tbs minced garlic
  • 1 Tbs Olive Oil
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp Salt
  • 1/4 tsp red chile sauce (i.e.Cholula)
  • Dash of red pepper
  • 1 cup diced seeded tomato
  • 1 cup diced avocado

Steps

1) Saute green beans & corn 3 minutes, until lightly browned 2) Mix in bowl: green beans & corn, red pepper, red onion, cilantro, white & black beans 3) Mix juice, vinegar, and spices (through red pepper), and add to beans 4) Cover and chill at least 30 minutes 5) Add tomato & avocado just before serving
