Ingredients

  • 1 med red bell pepper
  • 1 lb wax or beans, trimmed
  • 2 cup cherry tomatoes, halved
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh parsley
  • 2 Tbs cider vineger
  • 2 Tbs fresh lemon juice
  • 1 Tbs brown mustard
  • 11/2 tsp sugar
  • 1 tsp Olive Oil
  • 1/2 cup (2 oz) crumbled goat cheese

Steps

1) Broil pepper 10 min or until blackened 2) Peel and cut into strips 3) Cook beans covered in water 4 minutes, until crisp-tender 4) Mix beans, peppers, tomatoes, onion, and parsley 5) Combine salt, vinegar, lemon, mustard, sugar, oil 6) Drizzle over salad 7) Top with goat cheese
