Ingredients
- 1 med cucumber
- 2 slices red onion
- 2Tbs white wine vinegar
- 1 Tbs soy sauce
- 2 tsp Olive Oil
- 1/2 tsp parsley flakes
- 1/4 tsp sugar
- 1/4 tsp ground ginger
Steps
1) Peel cucumber (or partial peel, leaving alternating strips of peel on), and slice thinly
2) Combine with onion in small bowl
3) Mix vinegar, soy sauce, oil, parsley, sugar, and ginger
4) Pour over cucumber, tossing to coat
5) Refrigerate until serving
