Ingredients
- 3 med yellow summer squash
- 1 med sweet red pepper
- 1 med sweet yellow pepper
- 1 med sweet orange pepper
- 1 med sweet green pepper
- 1 small red onion, sliced into half-rings
- 1 15-oz can whole baby corn
- 1 med Carrot
- 1/4 cup white vinegar
- 2 Tbs sugar
- 2 Tbs water
- 2 Tbs olive or canola oil
- 1 tsp Salt
Steps
1) Slice squash 1/4 inch thick
2) Slice or chop peppers
3) Slice carrots crosswise
4) Combine in bowl with corn
5) Mix remaining ingredients
6) Pour over vegetables
7) Cover and refrigerate at least 2 hours
