Ingredients

  • 2-3 large tomatoes, cut in wedges
  • 1/2 small onion, sliced
  • 1/3 cup white vinegar
  • 3 Tbs sugar
  • 2 Tbs water
  • 11/2 tsp mustard seed
  • 1/8 tsp cayenne pepper
  • 1 small cucumber, sliced

Steps

1) Combine tomatoes and onion in bowl 2) Set aside 3) Mix vinegar, sugar, water, mustard seed and cayenne in saucepan 4) Boil 1 minute 5) Pour over tomatoes 6) Chill (2 hrs in refrigerator) 7) Add cucumber 8) Refrigerate overnight 9) Serve with slotted spoon
