Ingredients
- 1/4 cup Flour
- 1/2 tsp rosemary, crushed
- Pepper
- 2 sm (3 cups) sweet potatoes, peeled and shredded
- 4 Eggs
- 1/3 cup chopped onion
- 1 Tbs margarine, divided
- yogurt or sour cream
Steps
1) Mix flour, rosemary and pepper
2) Pat potatoes dry with paper towels
3) Combine with eggs and onion
4) Stir in flour mixture
5) Melt 2 tsp margarine in skillet
6) For each pancake, spoon about 1/3 cup potato mixture into skillet, spreading into 4" circle
7) (8 pancakes) Cook until golden, about 10 minutes on each side
8) Serve hot with sour cream or yogurt if desired
