Ingredients
- 7 oz elbow macaroni
- 1/3 cup low-fat mayonnaise
- 11/2 Tbs Dijon mustard
- 1 tsp bottled horseradish
- 1 cup cherry tomatoes, halved
- 1/2 cup Scallions
- 2 hard boiled eggs*
- red leaf lettuce*
Steps
1) Cook pasta 8-10 minutes
2) Drain, and rinse well with cold water
3) Combine mayo, mustard, horseradish
4) Toss into pasta
5) Add tomato, scallion, eggs
6) Serve immediately, or chill
