Ingredients

  • 7 oz elbow macaroni
  • 1/3 cup low-fat mayonnaise
  • 11/2 Tbs Dijon mustard
  • 1 tsp bottled horseradish
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Scallions
  • 2 hard boiled eggs*
  • red leaf lettuce*

Steps

1) Cook pasta 8-10 minutes 2) Drain, and rinse well with cold water 3) Combine mayo, mustard, horseradish 4) Toss into pasta 5) Add tomato, scallion, eggs 6) Serve immediately, or chill 7) * optional ingredients not included in nutritional info
