Ingredients
- 1 red bell pepper
- 1/3 cup uncooked orzo
- 1 Tbs olive oil, divided
- 1/2 cup frozen corn
- 1/3 med red onion, sliced
- chives
- 1 Tbs Parsley or cilantro
- 1 Tbs white wine vinegar
- Pepper
- Salt
- 1 tsp minced jalepeno/chili
- 1 tsp minced garlic
Steps
1) Broil pepper (grill or broiler)
2) Dice
3) Cook orzo in boiling water
4) Drain, drizzle with 1/2 Tbs oil, and cool slightly
5) Add remaining ingredients
6) Serve at room temp or chilled
