Ingredients

  • 1 cup medium shell macaroni, rotini, or radiatore pasta
  • 1 141/2 oz can diced tomatoes
  • 3 Tbs Orange Juice concentrate
  • 1/4 tsp ground giner
  • 1 lg onion cut into thin wedges
  • 1 Tbs soy sauce
  • 1 lg zucchini, halved lengthwise, and cut into 1/4"-thick slices

Steps

1) Cook pasta 2) Drain 3) Set aside and keep warm 4) Meanwhile, in a large skillet combine undrained tomatoes and orange juice, and ginger Bring mixture to boiling 5) Boil, uncovered, 5 to 6 minutes or until slightly thickened 6) Add zucchini, onion, soy sauce and a dash of pepper to skillet 7) Return to boiling; reduce heat 8) Simmer, uncovered, about 3 minutes or until zucchini is crisp-tender 9) Stir in pasta mixture. Heat through
