Ingredients

  • 5 Tbs Olive Oil
  • 1 1/2 onions, chopped
  • 3 cups uncooked long-grain rice
  • 5 cups chicken broth
  • 1/2 cup Lemon juice
  • 1 1/2 Tbs Lemon zest
  • 1/2 tsp Salt
  • 3/4 tsp Pepper

Steps

1) Heat the oil in a large saucepan over medium heat. 2) Add the onions and saute until tender and fragrant 3) Add rice and saute for 2 minutes more 4) Raise the heat to high, add remaining ingredients. Bring to boil, stirring occasionally. 5) Simmer until liquid is absorbed (20 min)
