Ingredients
- 5 Tbs Olive Oil
- 1 1/2 onions, chopped
- 3 cups uncooked long-grain rice
- 5 cups chicken broth
- 1/2 cup Lemon juice
- 1 1/2 Tbs Lemon zest
- 1/2 tsp Salt
- 3/4 tsp Pepper
Steps
1) Heat the oil in a large saucepan over medium heat.
2) Add the onions and saute until tender and fragrant
3) Add rice and saute for 2 minutes more
4) Raise the heat to high, add remaining ingredients. Bring to boil, stirring occasionally.
5) Simmer until liquid is absorbed (20 min)
