Ingredients

  • 1 lb green beans
  • 1/2 cup thinly sliced red onion
  • 1 pt cherry tomatoes, halved
  • 2 Tbs Lemon juice
  • 1 Tbs Olive Oil
  • 1 Tbs water
  • Pepper
  • Salt
  • 1 cup chopped celery

Steps

1) Cook green beans 2) Add onions 3) Put tomatoes in separate bowl 4) Mix lemon juice, oil, water, salt & pepper 5) Pour over vegetables in each bowl, tossing to coat 6) Refrigerate at least 1 hour 7) Stir celery into bean mixture 8) Transfer to serving plate, and surround with tomatoes
