Ingredients

  • 8 oz uncooked bow tie pasta
  • 2/3 cup chicken broth
  • 3 cloves Garlic
  • 1 15-oz black beans, rinsed, divided
  • 1/2 cup fresh cilantro
  • 3 Tbs Lime juice
  • 2 Tbs Olive Oil
  • 1 Tbs tomato paste
  • 11/2 tsp oregano
  • 3/4 tsp Salt
  • 1 med zucchini, halved and sliced
  • 1 med green pepper, chopped
  • 1 med sweet red pepper, chopped
  • 1/3 cup chopped red onion

Steps

1) Cook pasta 2) Rinse with cold water 3) Mix broth, garlic, 1/4 cup black beans, cilantro, lime juice, oil, tomato paste, oregano and salt in food processor 4) Blend until smooth 5) Mix pasta, veggies, and remaining beans in bowl 6) Add blended mix, tossing to coat 7) Chill until serving
