Ingredients

  • 3 cups loose packed frozen rhubarb, partially thawed
  • 3/4 cup sugar
  • 1/2 cup cranberry juice cocktail, divided
  • 1 Tbs Lemon juice
  • 11/2 Tbs cornstarch
  • 3 Tbs orange juice
  • 21/2 cup whole strawberries
  • 11/4 cup buttermilk
  • 1 Tbs Vanilla

Steps

1) Simmer rhubarb, sugar, 1/4 cup cranberry 7-9 minutes until rhubarb is tender 2) Mix 1/4 cup cranberry, lemon, cornstarch 3) OJ 4) Stir into rhubarb mixture 5) Blend in blender until smooth 6) Combine strawberries, buttermilk in blender 7) Strain through fine sieve 8) Stir into rhubarb mix 9) Pour into about 6-8 ice cubes, and freeze 10) To serve, blend in frozen mixture 11) Garnish with 2T buttermilk and strawberry
