Ingredients

  • 1 tsp Olive Oil
  • 1/2 cup Scallions or Chives
  • 15.5 oz can Chickpeas
  • 1/4 tsp Rosemary
  • 1 Tbs Salt
  • <1/2 cup Lemon juice or Chicken broth

Steps

1) Saute scallions in oil 2) Add chickpeas and continue cooking for 1 minute 3) Place all ingredients in blender and blend until smooth 4) Use as sandwich spread, or a low-fat alternate to humus 5) Makes a nice sandwich with sliced tomato on pitas
