Ingredients

  • 1/3 cup sugar
  • 5 Tbs butter, softened
  • 2 Eggs
  • 1 cup white flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp Salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 3/4 cup (6 oz) lowfat van yogurt
  • 3/4 cup mashed banana (about 11/2 bananas)
  • 1/4 tsp vanilla extract

Steps

1) Mash bananas 2) Cream butter, and add sugar, beating about 5 min 3) Add eggs one at a time 4) Add dry ingredients and yogurt alternately to sugar mix 5) Fold in bananas & vanilla 6) Pour into 8x4 in loaf pan 7) Bake 1 hour at 350F 8) Test with knife 9) Cool 10 min before removing from pan
